Sweet and Spicy Jerk Shrimp

Absolutely delicious. As others have said, it could have used a bit more jerk seasoning (we like it spicy) but the flavor balance was amazing. The only changes I made were to sub the red pepper for zucchini (it’s what I had on hand and I love it), yellow onion for red and dried jalapeño for fresh. Served with seasoned yellow rice. This is a keeper!!
Was good, not as spicy as I was hoping. Only thing I did differently was brine the shrimp for 30 minutes prior to cooking (something we always do when cooking shrimp). Will make again.

Ya’ Mon! We loved this! Upped the Jerk Seasoning to 1.5 TBLS and glad we did. Added a little more flavor and heat. Also used a 15oz can of drained, pineapple tidbit vs cutting. The rest was as is! Served over brown rice - which I would do something a little differently with that for next time; the rice almost dulled it down but this sheet pan meal itself was excellent! A keeper and will absolutely make again!! Thank you!
I will certainly make this dish again. Everyone in my family loved it I did add about a tablespoon of browning liquid (Grace brand) But otherwise stuck exactly to the recipe. Excellent!!
